Welcome to Nibble Nation, a joyful partnership between the Black Child Development Institute – Greater Los Angeles and Chef Kimberly Knight, a celebrated Chef EduCater with more than 25 years of experience inspiring families through food and education.
As part of NBCDI’s eight outcomes, Nibble Nation brings the “Every Black Child Enjoys Meals with Vegetables” focus area to life, helping children see that veggies can be colorful, creative, and full of adventure.
Through the AfroVeggieVerse, Chef Kimberly transforms the kitchen into a place of learning, laughter, and culture. Each monthly episode features hands-on, family-friendly recipes, fun food facts, and seasonal ingredients that encourage children ages 0–8 (and their families) to cook, taste, and explore together.

Through the Black Child Development Institute – Greater Los Angeles x Nibble Nation collaboration, Chef Kimberly Knight brings her passion for culinary education to life, helping families and caregivers reimagine plant-based eating as fun, flavorful, and full of imagination. As a Chef EduCater, a lifelong teacher of food and service, Chef Knight has over 25 years of experience inspiring young cooks in colleges, high schools, afterschool programs, and summer camps. She holds an A.A. in Culinary Arts, a B.A. in Culinary Management, and a M.Ed. in Curriculum and Instruction, uniting deep culinary mastery with an educator’s heart. Beyond the kitchen, she volunteers with nonprofits fighting food insecurity, handcrafts small-batch soaps, and gathers family and friends each month for her signature Sunday Supper, a celebration of nourishment, connection, and community.
